Fresh Strawberry Cake with Basic Decoration


For this month baking partner challenge Divya Ashok of Divya's Dinner suggested this cake. She is good cake designer and runs a bake shop. I wanted try a cake decoration ever since I started baking cake. Bought a cake decorating tool recently and at the same time I got this recipe. So without waiting started preparing this. Thanks swathi and Divya for this recipe.I don't have a 6' inch round pan. So made it in 7" square pan







Ingredients 


For Strawberry Puree

Rip Fresh Strawberry                        1 lb

Sugar                                                1 tbsp

For the Cake

Cake Flour                    1 cup + 2 tbsp

Baking Powder            2 tsp

Salt                              1/2 tsp

Sugar                            3/4 cup

Butter                            6 tbsp

Egg                               2 eggs

Strawberry Puree         1/4 cup

Vanilla Extract              1 tsp

Red Food Color            a pinch (Optional)
 
Method

Strawberry Puree

Wash and hull fresh ripe strawberries. Cut it in to small pieces and transfer it to a bowl. Add a tablespoon of sugar and give a quick mix. Cover it and allow it to sit for 2-3 hours/ overnight in the refrigerator. Strawberries will become tender and juicy.

Simmer the tender strawberries in a pan with ¼ cup of water for 20-25 mins in low flame. Mash it well with a spatula and allow it to cool.

Once cooled transfer the contents to the blender with ¼ cup of water and puree the cooked strawberries. 

Filter the puree to remove any chunky pieces. 

 Again bring the filtered puree to the stove and slow cook it in low flame for another 15 mins. Reduce the puree to 1/4 cup. (If you have a little more puree reserve it for filling)
 
 For the cake

Preheat oven to 350 F. Grease or line the  two 6” pans. 
Cut the butter in to pieces and allow them to sit at room temperature. Break open the eggs in a bowl and keep it ready.

In a mixing bowl ,  take 1/4 cup of strawberry puree and milk whisk together well.Whisk egg one at a time and combine well.

Now add vanilla extract ,red food color and combine well.

In a large mixing bowl , sift cake flour , baking powder and salt. Mix well using hand mixer or spatula.

Toss in softened butter and mix until it bread crumbs like texture.

Slowly add the wet ingredients into the dry ingredients little by little.

Pour the batter equally into two 6" cake pans.

The mixture will not be runny and it will be difficult to spread. Don't use spoon to spread it, instead drop the pans on the counter multiple times to level the batter.

Bake it at 350 degrees for 25-30 mins or until a skewer inserted comes out clean.

Once done cool it on a wire rack and cover with plastic wrap freeze it for overnight.

Decorating a Cake
                       
Remove the cake from the freezer 4 hours before you start decorating and place it at room temperature.

Basic Butter cream Frosting Recipe

Ingredients
Butter                  3 sticks or 11/2 cups softened
Powder Sugar      41/2 cups sifted
Heavy Cream       3 tbsp
Vanilla Extract        1 tsp
Salt                        a pinch
 
Method
In a large mixing bowl, add softened butter and mix it till it becomes creamy.
Add sifted powdered sugar, heavy cream, salt and vanilla extract and mix it for couple of mins.
Assembling the cake
Trim the edges and level the cake. Place one layer of cake on cake board trimmed edge facing down.

Add tablespoon of strawberry puree to 1/4 cup of frosting. Mix it and spread it on the top of the first layer of cake.Stack another layer.

Add 1/2cup of frosting on the top and spread it evenly on the top and sides.Make sure the cake is fully covered with frosting. This is called crumb coat.Let it sit in fridge for an hour.

Remove the cake from fridge and add generous amount of frosting on top and sides. Spread the frosting evenly.

Fill the piping bag with frosting and insert start tip and start decorating on top of the cake.

Sprinkle some edible beads on top .

Note
If you don't have cake flour, you can prepare your own by substituting with all purpose flour and corn starch.
1 cup cake flour = 1 cup of APF + 1 tbsp of Corn flour.

Maa Laddu | Pottukadali Urundai | Easy Diwali sweet


Last Diwali i made Wheat Flour Laddo and Besan Laddu this time i want some other easy laddu. This recipe is now flooding with almost in every one is blog. So want to post this easy recipe.




Ingredients

Pottukadalai / Roasted Gram           1 cup

Sugar                                                1/2 cup

Cardamom                                        3-4 Nos

Ghee                                                 1/2 cup (Melted)

Cashew nuts                                     7 - 8 Nos

Method                           


Powder the roasted bengal gram and keep aside. Powdered the sugar along with cardamom.

Sieve the flour and sugar together for even mixing.

Melt the ghee , roast the cashew nuts in ghee and mix it with flour and sugar mixture.

Mix the hot ghee into mixture and mix well using spoon or spatula.

Start making laddus while they still warm.

Store in airtight container and enjoy.

Microwave Palkova | Easy Diwali recipe

Palkova is  milk based sweet made by simmering the milk until it reduces it volume.This is really a time consuming process. Microwave palkova  will reduce the generous amount of time rather doing in a traditional method .With less than 3 ingredients we can able to make yummy sweet. Treat you friends and family with easy and yummy sweet for this Diwali.








Ingredients

Condensed Milk             1 tin

Curd                                3 tbsp

Ghee                               1 tsp


Method

In a microwave safe bowl , grease the bowl. The bowl should be deep and big.

Pour the condensed milk into greased bowl , add curd and mix well.

Keep in microwave for in high for 10 minutes. keep stirring for every 40 seconds.

After 8- 10 minutes, it will come as a palkova consistency.

Let it cool and serve.

Note

After 10 minutes it may be liquid but after some it will become dry.

The microwave safe bowl should be deep and big. Otherwise it will spill over.

Keep eye on microwave for every seconds.

Maida Biscuits | Sweet Diamond cut Biscuits | Easy Diwali Snakcs


Maida biscuits are easy snack recipe for Diwali.After posting two sweet recipe , i want to savory recipe but already posted savory version of  Diamond Cut Biscuit  using whole wheat flour. So i posting a sweet version. These munch on quite addictive and you can't stop munching.


Maida Biscuits


Ingredients

Maida / All purpose Flour                      1 Cup

Powdered Sugar                                      1/2 Cup

Salt                                                          a pinch

Hot Oil /Melted Ghee                             3 tbsp

Oil for deep frying

Method


In a mixing bowl , add maida ,powdered sugar and salt combine well. Now add oil/ghee and mix well.

Add water little by little and form a stiff and pilable dough.Knead well for about 5 -8 minutes.

Cover with clean kitchen towel and rest the dough for an hour.

After an hour dive the dough two equal portion.

Roll the dough into a circle using rolling pin. Then cut the circle into diamond or square.

Heat oil for deep frying.Once oil hot put diamonds into oil and cook on both sides.This will take about 3 -5 minutes. Cook in a medium flame.

Take out and please in paper towel and remove excess oil. Store in air tight container.

Bread Gulabjamun | Easy Diwali sweets

Gulabjamun is a famous recipe in India for Diwali or in any occasion. Traditionally gulab jamuns mare using khoya or paneer. I usually do gulab jamuns using ready made mix. This bread jamuns easy and tasty as like normal gulab jamuns.Try this easy gulab jamuns for this Diwali


Bread Gulabjamun


Ingredients

For Jamun

Bread               4 slices

Milk                 3 tbsp

For sugar Syrup

Water              1 cup

Sugar               1/2 cup

cardamom      2 -3 Nos

Oil for  deep frying

Method


Cut the brown part of the bread.Add 3 tbsp of milk and knead like a chappathi dough.

Heat oil in a pan for deep frying. Mean while start preparing the sugar syrup. Add one cup of water and 1/2 cup of sugar in a sauce pan. Once start boiling add cardamom and take out from flame

Once oil is hot fry the balls and keep aside. Add fried balls in sugar syrup still it warm.

Keep soak at least for 30 minutes. Serve chill or warm

Chocolate Layer Maida Burfi | Easy Diwali Sweets


Maida burfi is easy recipe to prepare for Diwali . It can be prepared in less 10 minutes.I'm not big fan of maida burfi but when i saw the post of Raks Kitchen Chocolate Maida burfi , i want try this recipe for sure. Every blog started posting Diwali recipe . Stay tuned for next 5 days for Easy Diwali recipe here.

Chocolate Maida Burfi




Ingredients

For White Layer

All purpose Flour / Maida                      1/2 cup

Sugar                                                       1 cup

Water                                                       1/2 cup

Ghee                                                        1/4 cup

For Chocolate Layer

All purpose Flour / Maida                      1/2 cup

Coco Powder                                         1 tbsp

Sugar                                                       1 cup

Water                                                       1/2 cup

Ghee                                                        1/4 cup


 Method

Heat ghee in a non stick pan until hot. Add maida and fry until color changes or nice aroma comes.It will take less then a minute.Switch off the flame and keep aside.

To prepare the sugar syrup,dissolve sugar in 1/2 cup of water and bring it to boil. Once it reached one string consistency add flour mixture and turn off the heat.

Mix well to the smooth paste. Mix until it get thicken but still in pouring consistency. Transfer it to the greased plate or pan. Level it using spoon.

For the chocolate layer 

Heat ghee in a non stick pan until hot.Add maida don fry until nice aroma comes. Now add coco powder and mix well. Switch off  the flame

To prepare the sugar syrup,dissolve sugar in 1/2 cup of water and bring it to boil. Once it reached one string consistency add flour mixture and turn off the heat.

Mix well to the smooth paste. Mix until it get thicken but still in pouring consistency. Pour it over the already prepared white layer. Level it using spoon.

Let it set for at least for half an hour.

Note

Bringing the one string consistency is very important. If the one sting consistency not reached it will not get thick.

You can make only chocolate or vanilla or add any other colors to white layer.
