Sweet Corn Kebab


Sweet corn kebab is a healthy and delicious evening snack. I am not deep fried them to cut down the oil. It really tastes Awesome.Linking this recipe to CWS - Corn Event hosted by me




Ingredients

Sweet corn                1 cup (Fresh or Frozen)

Green chilli               2 Nos

Potato                        2 Nos (Boiled)

Ginger                       1inch

Onion                        1 No

Rice Flour                 2 tbsp

Corn Flour                2 tsp

Garam Masala         1 tsp

Cumin Powder         1/2 tsp

Pepper Powder        1/2 tsp

Coriander Leaves     handful

Salt to taste


Method

Steam or microwave the sweet corn. Once cooled in a blender , blend sweet corn along with green chilli,ginger and coriander leaves.

To the blended mixture , add chopped onion,mashed potato ,rice flour ,Garam Masala,cumin powder,pepper powder and required amount of salt.

Mix well ,then add corn flour and mix well.

Divide the mixture into eqaul log size or round size. Heat 1 tbsp oil in a pan,once hot fry in medium heat on both the sides.

Serve with Ketchup or green chutney.

Note

Either you can deep fry or shallow fry them

Spinach Strawberry Chocolate Cupcake


For this  month "Shhh Cooking secret Ingredients" group was started by Priya of Priya's Versatile recipes, i paired with Sonali Phatak Mahajan she gave me spinach and strawberry as a secret ingredients. The day since she gave the ingredients I'm thinking what can i make with this ingredients.Finally i deiced to do bake with spinach and strawberry .  When i Google about it,i found this recipe here. The original recipe used blueberry , i replaced it with strawberry.This recipe is good for picky eater kids. They cant find the hidden ingredient






Ingredients

For the Spinach & Strawberry puree

Chopped spinach                             2 cup

Chopped strawberry                        1 cup

lemon Juice                                     1 tsp

Water                                              1 tbsp (If required)

For Cupcake

Wheat flour                                     1/2 cup

All purpose flour                             1/2 cup

Egg                                                 1 no

Spinach & Strawberry Puree         3/4 cup

Butter                                              4 tbsp

Chocolate chips                             1/3 cup

Coco powder                                 2 tbsp

Baking powder                              2 tsp

Vanilla Essence                            1 tsp

Salt                                               1/4 tsp

Method

For Spinach & Strawberry Puree

Wash and chop spinach. Bring water and spinach to boil and then simmer for minutes

Wash and chop the strawberry.

In a blender , blend cooked spinach , strawberry along with lemon juice and water until smooth.



For cupcake

Preheat the oven to 350F and line the muffin tray.

In a microwave safe bowl melt the chocolate butter along with chocolate chips in microwave for 30sec.

In a mixing bowl , combine melted butter and chocolate chips,pureed spinach ,egg,vanilla and sugar.

Whisk together the dry ingredients , wheat flour,all purpose flour,baking powder and salt.

Combine dry ingredients into wet ingredients slowly until combine.

Pour the batter into muffin liners and bake it for 20-25 minutes.

Cool it wire rack and then serve.

Egg Puff - Home Made Puff pastry

For this month Baking partner challenge ,recipe is making Puff pastry sheet from scratch.This recipe was suggested by Sangeetha Priya of Nitha Kitchen. I tried this egg puff using store bought pastry sheet once, that time I'm not started blogging. While eating puffs i thought how they making this puff pastry sheet? . That time itself i searched and found the recipe. But never got an opportunity to try. Thanks Sangeetha Priya and swathi to making me to try this Puff pastry.




Ingredients


All purpose flour               2 cup

Butter                                1 cup ( 2 sticks)

Salt                                   1/4 tsp

Cold water                       150 ml


Method


In a mixing bowl sieve the flour and salt. Make a well in the middle and add 2/3 of the water,mixing until you have a firm dough.(Add extra water if needed)Cover with cling wrap and refrigerate for 20mins.

Soften the cold butter between two parchment paper by pressing with rolling pin. Shape them into rectangle and place them in fridge until used.


In lightly floured surface or board ,roll the dough with thick center , place butter in center and seal it.

Roll gently and form into smooth rectangle. Roll the dough in one direction only ,until 3 times the width.Keep edges straight and even.

Mark the dough into thirds. Fold the bottom third up and top third down.Make a quarter turn and seal the edges by pressing with the rolling pin.

Roll out again to three times the length and mark into thirds.Fold the bottom third up and top third down. Cover with cling wrap and refrigerate for 20mins.

Roll out again for four times and refrigerate.

Chill the dough for an hour before using.

For Filling

Egg                            3 nos

Onion                        1 no

Ginger garlic paste    1 tsp

Cumin seeds              1/4 tsp

Chilli Powder            1 tsp

Coriander powder     1 tsp

Garam masala           1/8 tsp

Salt to taste


Method


Heat oil in a pan, add cumin seeds once splutter ,add ginger garlic paste cook til raw smell goes.

Add onion and cook till translucent , add chilli powder,coriander powder ,garam masala and required amount salt ,coon til the spices get cooked. Don't burn the spices.

Roll the entire dough into a thin sheet and cut into rectangles .Use as per need and freeze remaining sheets until used.

Preheat the oven to 425F

Place spoonful of filling and half egg and seal the edges. Repeat this for remaining sheets.

Bake it for 10 -15 minutes or until the edges are golden brown.

Serve it with ketchup .

Apple Milkshake


A apple day keeps the doctor away. But i'm not a big fan of apple, i like to eat as a milkshake. One evening when i craving for something to fill my tummy , i made this milkshake. 



Ingredients

Apple                      1 no

Milk                        2 cups

Honey                     1-2 tsp(change as per taste)

Cinnamon              1/2 tsp

Method

Peel the skin and chop the apple .

Blend chopped apple,honey with 1/4 cup of milk as a smooth paste.

After that add cinnamon powder and remaining milk and blend forthy . Transfer into serving glass and sprinkle some cinnamon on top of it and serve.

Wheat Diamond cut biscuits - Savory


Diamond cut biscuit are usually made in maida , i replaced it with whole wheat flour. These diamond cut biscuits are usually made during festival time.But it is good tea time snack. In my school days when my grandma used to make these crispies, i used to help her by cutting the rolled dough as diamond. But i dont know the measurement so i got the recipe from here. Each this with your tea or coffee.



Ingredients

Wheat Flour                 1 cup

Cumin Seeds                1/2 tsp

Chilli powder                1/2 tsp

Hing                             a pinch

Rice Flour                   1 tsp

Cooking  Soda            a pinch

Salt as per taste


Method

Take all the ingredients in a mixing bowl, add 2 tsp oil and add water little by little knead like a chappathi dough.

Rest dough for 15 minutes. mean while heat oil in a pan for deep frying.

Take a small portion , roll like chappathi and cut into diamonds or square.

Fry them in small batches until golden brown. Remove excess oil using paper towel.

Store in air tight container.

Aval Payasam with Jaggery | Krishna Jayanthi Recipe


Aval payasam usually made during Krishna Jayanthi. This one is easy dessert recipe to serve to guest within in less time.I already posted Aval payasam  with sugar but traditionally made with jaggery during festival time.




Ingredients

Aval                               1/2 cup

Milk                               11/2 cup

Jaggery                           1/2 cup

Cardamom Powder       1tsp

Cashew                         5 - 6

Ghee                             1 tsp            


Heat ghee in a pan , fry cashew and keep aside. In a same pan add Aval and roast still color changes.

Boil the milk ,add Aval and cook till it get cooked.Add cardamom and switch off the flame



Powdered the jaggery, add to milk once it get cooled. Add cashew it to the Payasam and serve hot.


Note

If you have impurities in jaggery , melt the jaggery with water and strain the impurities.

Add jaggery or jaggery syrup once cooled to milk. Otherwise the milk will curdle.

Pasi Paruppu Laddu | Easy Diwali Sweet


Pasi paruppu laddu can be made just with four ingredients. Its very healthy recipe for kids.I tasted this laddu once but i like it flavor. I'm making this for first time and it came out well.




Ingredients

Yellow Moong Dal                 1 cup

Sugar                                      1/2 cup

Ghee                                      1/4 cup

Cashew                                 5-6 Nos

Cardamom                           2 nos

Method

Dry roast the moong dal til golden brown and let it cool down.Once cool down blend as a fine powder.

Powder the sugar along with cardamom and keep aside.

Sieve the powdered moong dal and sugar. Melt the ghee and fry cashews.

In mixing bowl take powdered item ,cashew and add ghee  little by little and mix well.When it is warm enough to hold start make laddus.

Wheat Flour appam | Karthigai Deepam Special


This wheat flour sweet appam is a instant appam recipe made in less time. I already posted Maida Sweet Paniyaram which is deep fried one. To reduce the oil i used paniyaram pan to make this one. This can be a healthy snack for kids





Ingredients

Wheat Flour                    1 cup

Jaggery                           1/2 cup

Rice Flour                      2 tbsp

Banana                          1 small

Cardamom powder       1 No

Cooking Soda              a pinch

Salt                               a pinch

Oil for deep frying

Method 

In a pan heat jaggery with little amount of water.The water level should just immerse the jaggery.

Heat until it slightly thick.Remove from heat and strain for any impurities.

In a mixing bowl take wheat flour,rice flour,salt,banana and crush it with your hand.Mash the banana well. Then add jaggery syrup and required amount of water to get the batter to pouring consistency.

Now add cooking soda ,cardamom powder  and mix well.

Heat paniyaram pan , add little oil to each hole.Then spoon the batter to each hole. When bottom cooked flip it and cook on other side.

Appams are ready to serve. Serve it hot.

Kondakadalai Sundal | Channa Sundal| Vinayaga Chathurthi Special


This month for Friendship 5 series we going to post under the theme of "Festive recipes". Lot of festive going to start.So this the right time to post festive recipes.We used to make Kondakadalai Sundal during Vinayaga Chathurthi and Navratri.But me and hubby always used to have this a snack once in a week. Channa is high in protein and fiber. So it is very  healthy snack recipe for kids.






Ingredients

Channa                1/2 cup

Coconut grated    1 tbsp

Mustard seeds      1 tsp

Red Chilli            2 Nos

Hing                   a pinch

Curry Leaves     1 spring

Method

Wash and soak channa dal for overnight or at least 8 hour.

Pressure cook the channa dal with salt and water for 4 -5 hisses.The water should just immerse channa.Drain the excess water.

Heat oil in a pan, add mustard seeds,once splutter add red chilli,hing and curry leaves one by on one.

Add cooked channa and mix well.Cook til water evaporates.Now add grated coconut and mix well
