Ragi Malt


As i am following a stick diet, I'm not cooking any thing special to post in blog.I made this ragi malt when i need to fill my tummy with a healthy drink (but i still craved for coffee) .Ragi malt is healthy drink and its a good  replacement for coffee.Including the ragi in diet is good choice for weight loss.






Ingredients 


Ragi Flour               3 tbsp

Milk                        2 cups

Almond meal         2 tbsp

Sugar                     2 -3 tbsp

Cardamom           2 Nos

Method

Dry roast the ragi flour until nice aroma comes and keep aside.

In a blender , blend sugar and cardamom ,make a fine powder.

Boil the milk 11/2 cups of milk. Mix ragi flour with 1/2 cup of milk. Once milk boiled , add ragi paste and stir continuously to avoid forming lumps.

Add sugar and cardamom powder and stir well. Now add almond meal and mix well.

Keep stirring until slightly thick like porridge.But still it should be pouring consistency.

Serve hot or cold.

Blueberry Short cake


For this month baking partner challenge Reeni of Cinnamon nice and everything nice suggested this berry shortcake. You can use any kind of fruits to serve with this biscuit

Ingredients

All purpose flour           13/4cup

Corn flour                      1/14cup

Baking Powder              1 tbsp

Salt                                3/4 tsp

Sugar                            2 tbsp

Heavy cream                1 to 1 1/4 cups

Butter                           2 tbsp (melted)

Method

Preheat the oven to 425F and line the baking sheet with parchment paper.

 In a mixing bowl,sift flour,salt,sugar and baking powder. Stir in heavy cream to moisten the dough.

The dry bits should not fall when you squeeze the dough.

Turn the dough into lightly floured work surface. very gently pat it into a 8" circle. Use the sharp biscuit cutter and cut into round shape.

Dip the rounds in melted butter and place in baking sheet. Bake it for 15 -18 minutes until golden brown.

To serve
Split the biscuits in half. Top the bottom half with whipped cream and blueberries.then the top of the biscuit.Add a dollop of whipped cream and a blueberry on top as a garnish.

Banana Sweet Paniyaram


Banana paniyaram is a quick and easy snack recipe. This paniyaram will be prepare in our home whenever nothing is there munch on. This is also one of snack we enjoyed in our childhood.

Ingredients

Maida                    1 cup

Ripe banana          1No

Sugar                    7 -8 Tsp

Cooking  Soda     a pinch

Salt a pinch

Method

In a bowl , mix maida,sugar ,banana and mix well using your hands.

Then add water little by little make a smooth batter .The Batter should not too thick or watery.

Keep this aside for  10- 15 minutes. Meanwhile heat oil in a kadai.

After the oil is ready, add cooking soda to the batter and mix well.

Take a spoonful of batter and pour it in oil slowly.Cook on both the sides until turns golden brown.

Remove the excess oil using paper towel and serve.

Uppu Urundai


Uppu urundai is one of after school snack in my childhood.My grandma used to make this twice a month.She used prepare this with leftover Idiyappam flour.It is such a healthy and easy to make recipe.





Ingredients

For dough

Rice Flour                 1 cup

Water                         1 1/4 cup

Oil                             1 tsp

Salt  as per taste


Tempering

Curry Leaves           1 strands

Channa Dal             1 tbsp

Hing                       a pinch

Red chilli               2 nos

Mustard seeds        1 tsp

Coconut                2 tbsp

Method

Boil 1 cup of water with salt and oil . When water starts boiling add rice flour and stir continuously without foaming any lumps.

Switch off the flame and let it cool. Grease your hands with oil form a soft dough and keep aside.

Heat oil in a pan , add the items under "Tempering" one by one. Once splutter add this to dough and mix well.

Form a equal size balls out of dough.Steam them in a idly cooker or in streamer for  10- 15 minutes.

Serve them as it is or with your choice of chutney.

Note

Water required may depends on the type of rice flour.So adjust accordingly.

Ellu Urundai | Sesame seeds Urundai


Ellu urundai is my most favorite in my childhood. When ever my dad asked , what you want when i come back  I will always say ellu urundai. I never get bored eating this sweeties.I thought it is very difficult to make . When i searched recipe for making this sweeties i really shocked!! because it can be made just with 3 ingredients. Its simple and addictive.







Ingredients

Ellu / Sesame Seeds                3/4 cup

Grated jaggery                         1/2 cup

Cardamom powder                   1 tsp

Ghee                                         2-3 tsp

Method

In a pan dry roast the sesame seeds until nice aroma comes and allow it ti cool.

In a blender , grind it as coarse powder and then add jaggery. Blend it for one or two times.

Add cardamom powder and combine well. Add melted ghee and roll them into balls.

Note

I used white sesame seeds, you can replace with the black one too.

Used palm jaggery , so needed less. If you need more sweet you can increase the jaggery amount.

Bun Butter Jam

For the second day of "Childhood memories" for Friendship 5 series , my second most favorite Bun butter jam recipe. Whenever my grandma go for a fish market , she stop by bakery store to buy this bun butter jam for me to make me surprise after i return from school. Really those days are fun filled days. You can change the filling and stuff what ever you like.

Ingredients

For dough

All purpose flour            1 1/2 cup

Wheat flour                    1/2 cup

Salt                                 3/4 cup

Sugar                               4 tbsp

Milk                                2 tbsp

Yeast                             21/2 tsp or 1 sachet

Butter                           2 tbsp

For filling

Butter cream / Butter / Whipped cream

Jam (any flavor of your choice)


Method

In a wide bowl, take all ingredients except butter and knead for 10- 15 minutes.

Add butter and knead to make a soft dough. The dough will be sticky.

Cover it with cling wrap or kitchen towel and rest it for an hour to double in size.

After hour pouch down the air and divide the dough into 5 -6 equal parts. Cover them and let them raise for 45 minutes.

After that brush the top with milk and bake it at 350F for 20 -25 minutes.

Cool them on wire rack. The buns are ready to make the bun butter jam.

After the buns cool down cut them into half. Spread butter on one half and jam on other half

Enjoy your delicious Bun butter jam.

Tea kadai butter biscuit


This month for Friendship 5 series we going to post under the theme "Childhood memories". Even though we have lot of branded biscuit nothing can beat tea kadai or petty kadai Butter biscuit. Its a perfect combination with tea or coffee. In a my childhood, after returning from school i need 4 butter biscuit daily with a cup of coffee. Otherwise i wont accept the coffee.

Ingredients

All purpose flour              1 cup

Sugar                                1/2 cup

Butter                               1/2 cup

Salt                                  a  pinch

Method

Bring the butter to room temperature and powdered the sugar.


Sieve the flour and salt. Cream sugar and butter.

Combine flour ,butter cream and form a stiff dough. Roll it into log shape,cover it with cling wrap and keep refrigerate for an hour. 

 Preheat the 350F. Grease the baking sheet or line with parchment paper.

Cut the dough into 1/4 inch and arrange in a baking sheet. Bake it for 10 -15 minutes.

Cool down and serve with warm tea or coffee.

Spiced ButterMilk | நீர் மோர் | Summer Drinks


Inexpensive way to beat the heat is neer nor or spiced buttermilk.Not only inexpensive and easy to make.Having this in hot midday make you feel chill.









Ingredients


Curd                          1 cup

Water                         2 cup


Mustard Seeds           1 tsp

Green Chilli              2 Nos

Ginger                     1/2 inch

Curry Leaves          2 Strands

Coriander Leaves   few

Hing                      a pinch

Salt to taste


Method

In a bowl take curd and water whisk well. Add required amount of salt and mix well.


Heat oil in a pan , add mustard seeds.Once splutter add hing ,curry leaves,green chilli and ginger one by one.

Pour this tempering to curd and mix well. Garnish with coriander leaves and serve.

You can serve as it is or refrigerate for half hour and then serve.

Homemade Vanilla Icecream without Icecream maker


Ice creams are my favorite but i never though i will make it in home. Blogging made me to try lot of new things.One of this is ice cream.Making ice cream in your home is very easy.





Ingredients

Whipping Cream                    1 cup


Condensed Milk                     3/4 tin

Vanilla Extract                       2 tsp

Method

In a wide bowl , take whipping cream and vanilla extract ,whip it in a medium speed until soft peaks.
It will take about 6 -8 minutes.

Add condensed milk and and whip for 2 -3 minutes. (Add condensed milk according to your taste)

Pour in a container and freeze it for 5 -6 hours. After that scoop and serve.
