Dish it Out - "Fiber Rich Dishes" Event Announcement

When ever i saw event announcement on others space, i think of when i will host a event like that.
But i don't have the confidence to do that .It took this many month to get a confidence to host a event.

Yes i'm with the event announcement. Having immense pleasure to announce my first event. I have a chance to guest host Dish it out monthly event started by Vardhini from Cooksjoy. Thanks to Vardhini for letting me host her event.







 I choose this Month theme as Cooking with "Fiber Rich Dishes" . So friends wear your apron and start cook up dishes rich in Fiber and link it here.Make the event runs successful.

Eggles Ragi Whole Wheat Chocolate Cake | Finger Millet Chocolate Cake


Ever since i bought these mini cake mold , my hands were etching to use in baking .I thought this cake will be perfect for that. Ragi in baking is interesting and really healthy.  Its a good snack for kids.

Ingredients

Finger Millet                          1/2 cup

Whole wheat Flour                1 cup

Unsweetened Coco Powder   1 tbsp

Sugar                                     3/4 cup

Yogurt /Curd                        1/2 cup

Milk                                      1/4 cup

Olive oil                               1/4 cup

Baking powder                     1 tsp

Baking Soda                         1/2 tsp

Cinnamon                             1/4 tsp (Optional)

Vanilla Essence                    1 tsp (Optional)      

Method:

Preheat the oven 370F and grease or line the cake mold with parchment paper.

In a bowl sift ragi flour , wheat flour,coco powder ,Baking soda , baking powder and cinnamon.

Ina separate bowl mix sugar ,yogurt,milk and oil until sugar dissolves.

Add wet ingredients into dry ingredients little by little.

Pour the batter into greased cake mold and bake it for 40 - 45 minutes or until tooth pick comes out clean.

Remove from oven and cool it on wire rack.Serve it with chocolate syrup.

Chettinad Egg curry


Chettinad Egg curry is a authentic south Indian dish. Chettinad cuisine is famous for using freshly grounded masala. Preparing spices freshly ,will give a rich aroma to the curry. I bored of preparing usual Egg curry which i posted earlier. So i tried this Chettinad style and it come out very well.







Ingredients

Onion                                  1 no

Tomato                                2 Nos

Boiled Egg                         3 Nos

Turmeric powder               1/4 tsp

Coriander Leaves              For Garnish

Salt to taste

To roast and grind

 Coriander Seeds                 1 tbsp

 Red chilli                           2 Nos

Pepper corn                        1/2 tsp

Cumin seeds                       1/4 tsp

Fennel Seeds                     1/2 tsp

Grated Coconut                1/4 cup

Cinnamon                        1 inch

Cloves                             2


To Temper

Mustard seeds                 1 tsp

Curry Leaves                  2 -3 Strands


Method:

Heat a pan, dry roast all the ingredients under ''Roast and Grind" .Let it cool down and grind it as a paste. Take care not to burn the spices.

Heat oil in a pan, add mustard seeds and curry leaves once splutter add onion and cook till translucent.

Add tomato ,turmeric powder and some salt.Cook til tomato become mushy. Add  grounded masala paste til raw smell goes

Add 1 cup of water and allow it boil. make a slit in eggs , add it to the gravy and cook in low flame for 2 minutes.

Garnish with coriander leaves and switch off the flame. Serve the curry with Chappathi ,Idiyapam or with rice.

White Pumpkin Sambar


Sambar is a most common dish in south India. Sambar can be made with variety of vegetables.But some vegetable sambar only goes well with idli,dosa and vada.White pumpkin sambar is one kind of vegetables which accompaniment with Idli, dosa and rice. I have this sambar happily with chappathi too.




Ingredients

White Pumpkin                         1 cup (Chopped)

Onion                                        1 No

Tomato                                     1No

Toor Dhal                                 1/2 cup

Sambar Powder                        1 tbsp

Tamarind                                  a small lemon size

Turmeric Powder                    1/4 tsp

Coriander Leaves                   For garnish 

Salt to taste

To Temper

Mustard Seeds                        1 tsp

Curry Leaves                           1 -2 Strands

hing                                       a pinch

Method

Pressure cook the toor dal for 3 -4 hisses. Remove the excess water and mash it using ladle.

Extract the tamarind pulp and keep aside.

Heat oil in a kadai , add item under 'To Temper' ,once mustard seeds splutter add onion cook till it translucent.

Add tomato and cook till it become mushy.Add cubed pumkin , give a stir fry for 2 minutes.

Add sambar powder ,dal,Turmeric powder,salt and required amount of water.(Use the excess removed from dal). Let it boil for for 10 minutes.

Add tamarind extract and boil until the raw smell of tamarind goes.

Garnish it with coriander leaves and serve along with rice.

Oats Paruppu Adai


Adai is basically a dosa made with rice and dals. Me and husband wants to reduce rice in our regular diet. So i replaced the rice with Oats and it came out very well.No one can identify it is made with oats.



 



Ingredients

Oats                           1 cup

Channa Dal               1/4 cup

Toor Dal                    1/4 cup

Moong Dal               1/4 cup

Red chilli                 2 -3 Nos


To Temper

Onion                     1 medium

Ginger                     1 inch

Fennel seeds           1 tbsp

Curry Leaves          2 -3 Strands


Green Chilli           2Nos

Salt to taste


Method


Wash and Soak channa dal,Toor Dal and moong dal for 2 -3 hours.Drain the water and blend it along with red chilli , half of fennel seeds.Powder the oats in a blender and keep aside.

Heat oil in a pan,add fennel seeds,ginger,curry leaves.Once splutter add onion,green chilli and cook for a minute.

In a bowl mix dal mixture , powdered oats and tempered item with required amount of water.

Heat tawa , when is hot take 1 laddle full of batter and spread it in a tawa. Drizzle some oil and cook on the both sides.

Enjoy it along with the coconut chutney or tomato chutney.

Sweet Potato Dinner Rolls


I bookmarked this recipe long before from Rak's Kitchen. Now only i got the opportunity to do this recipe.Sweet potatoes are not only tasty and they are good for our health too.My and my husband never mind to eat nutritious vegetables in any farm.I made this dinner roll with left over sweet potato.This dinner role is moist and dense.Original recipe used 2 cups of all purpose flour,but i replaced it with 1 cup of wheat flour.








Ingredients

All purpose Flour                  1 cup

Wheat Flour                           1 cup

Sweet Potato                         3/4 cup

Active Dry Yeast                   1 Pct

Sugar                                     1 tsp

Olive Oil                               1/8 cup

Milk                                     1/2 cup

Butter                                    For Brushing

Warm Water                           1/4 cup

Method:

Steam / pressure cook the sweet potato. Peel the skin and mash.

In a 1/4 cup of warm water add sugar and yeast mix well. Keep it for 10 minutes and it should be raised. If not yeast is not active don't proceed further.

Add olive oil ,milk to sweet potato and mix well as smooth.

In a separate bowl ,take both flours ,add salt and mix well. Make dint in the middle,add yeast mix and mix well.

Then add sweet potato mix and make soft and elastic dough.It will take 8 -10 minutes.

Cover the bowl with cling wrap and keep it aside for an hour in a warm place.

After an hour, the dough will be raised double in volume .Punch down and knead again.

Divide the dough into equal sized balls and arrange in a greased baking tray.

Preheat the oven to 400F.Bake it for 12 - 15 Minutes. Take it out brush it with butter  and bake again for 5 - 8 minutes until top become golden brown.

Sweet potato buns are ready to serve.Serve it for break fast or dinner with butter and jam.

Sukku Kuzhambu | Dry Ginger Kuzhambu


Sukku or dry ginger is good for digestion.Its comfort  for cold and cough. This tangy sukku kuzhambu is perfect papad or any kootu.






Ingredients

Onion                        1 medium

Tomato                      1 medium

Sukku/Dry Ginger    1 middle finger size

Garlic                         6 -7 pods


Sambar powder         1 1/2 tbsp

Turmeric powder       1/4 tsp

Fenugreek Seeds       1/4 tsp

Mustard seeds          1 tsp

Tamarind                  Small lemon size

Curry Leaves          1 -2 Strands

Salt to taste


Method:

Extract tamarind juice and dilute with water to make it 1 to 1 1/2 cups.

Dry roast the sukku in a pan and let it cool down. Once cool down blend it in a blender and keep aside.

Heat oil in a pan,add mustard seeds ,fenugreek seeds and curry leaves. Once splutter add garlic and fry for 2 minutes.

Now add onion and cook til it translucent.

Add tomato , turmeric powder and some salt. Cook till tomato turns mushy.

Add sambar powder , tamarind juice and required amount water and salt.Let it boil until it reaches thick   consistency.

Simmer the flame ,add sukku powder and let it boil for a minute and switch off the flame.

Serve it with rice or with Idli dosa.


Note:

If become too spicy add few drops sesame oil to the gravy.

Palak Chapathi


Even though me and husband south Indians we used to eat chapathi or Paratha on weekdays.We will have rice only in weekends. when we bored of eating our regular chapthi subji, i will prepare stuffed Parathas /Chapathi. This Palak Chapathi is one of the way of taking greens in our diet. Easy and healthy chapathi.





Ingredients

Spinach                                            1 bunch

Whole Wheat Flour                         1 cup

Green Chilli                                    2 -3 Nos

Oil                                                   1-2 tsp (For Dough)

Salt as needed

Method

Wash and  cut the spinach leaves. In a pan saute spinach leaves for 2 minutes.Cool down and blend it with blender along with green chilli.

In a bowl take wheat flour,oil,salt and mix it well.

Add spinach puree little by little and make soft dough.Add water if needed.Close the dough with wet cloth and keep it aside for 15 minutes.

Divide the dough into equal size balls.Roll the balls into chapati using rolling pin.

Heat tawa ,put rolled chapathi and drizzle some oil. Cook on both sides until brown spots appear.

Serve hot with raita or pickle.

Custard Powder Cookies


One fine afternoon i leisurely sitting and surfing in net . Suddenly i got call from my family friend and she said we all come to your home at evening. After hang up realized i don't have any cookies / Snack to serve with coffee. Immediately these cookies came into my and started preparing immediately.These cookies came out really well and all the cookies vanished in the same day.

Ingredients

All purpose Flour             1 cup

Custard Powder               1/4 Cup

Sugar                               1/4 Cup

Baking Powder               1/4 tsp

Baking Soda                   1/4 tsp

Salt                                 1/8 tsp

Butter                             1/2 cup (Softened)

Vanilla Essence             1/2 tsp 


Method:

Preheat the oven to 350F. Line the baking sheet with parchment paper and keep aside.

In a bowl combine Flour,sugar, custard powder,baking soda,baking powder and salt.

Mix well and then add softened butter and form a dough.

Divide the dough into equal size balls. Flatten them using your palm or back of the spoon.

Arrange them in baking sheet with one inch apart and bake it for 10- 15 Minutes.

Remove  from the oven and cool in wire rack. Store in a air tight container.

Green Peas masala




Green peas masala is simple and easy to prepare dish.When you want to cook with the less ingredients and having frozen green peas this is the perfect dish.



Ingredients

Green Peas                  1 cup

Onion                          1 No

Tomato                       1 No

Ginger Garlic paste    1 tbsp

Green Chilli                2-3 Nos

Chilli Powder             1 tsp

Garam Masala           1/4 tsp

Cashew                     5 -6 Nos

Curd/yogurt              1 tbsp

Cream/Milk            1/4 cup

To Temper

Cinnamon             1 inch

clove                     2-3 Nos

Cumin seeds        1/4 tsp


Method:

Soak cashew in hot water for 10 minutes and paste it along with curd.

Heat a tsp oil in a pan, add onion,tomato and green chilli and saute well.Cool down and grind it to a smooth paste.

Heat oil in pan add item under 'To Temper' and once splutter , add ginger garlic paste and saute well.

And then add onion paste and saute for 2 - 3 Minutes. Add chilli powder,garam masala and required amount of salt.

Add a some water and let it boil for few minutes.Add cashew paste and mix well.

Now add green peas (i used frozen) and let it cook for 4 -5 minutes.Now add cream and give a quick stir.

Add coriander leaves and  switch off the flame.

Serve it with Chappathi or Pulka.

Note:

If using fresh green peas pressure cook it before adding to gravy.

Vazhaipoo Kootu | Banana Flower Kootu


My hubby is a big fan of Vazhai Poo, but in US we not able to get this flower even in Indian grocery Store. He searched every where , after 2 years of searching we found one shop which sells this flower. I never eaten Vazhai Poo in any form before marriage, to make me eat my hubby used to tell me it has this n that medical benefits like that. Once i tasted this recipe, i too become big fan of Vazhai Poo.

Generally people will tell , to make this recipe we have to soak this flower in buttermilk . But i didn't soak the flower in buttermilk and it doesn't have a any bitter taste. Only thing is we need to remove the thick black stalk and petal like plastic found in each florets.


Ingridents

Vazhaipoo                   3/4 cup (Chopped finely)

Channa Dal                 1/4 cup

Moong Dal                  1 tbsp

Onion                          1 medium

Tomato                        1 medium

Green chilli                2 -3 Nos

Sambar Powder          1 tbsp

Turmeric Powder       1/4 tsp

Fennel Seeds             2 tsp (Roughly powdered )

Curry Leaves            2 -3 Strands

Coriander Leaves     For Garnish

Salt to taste


Method:

Clean and chop the florets. Take the chopped florets in a bowl , sprinkle some turmeric powder,mix well. This will prevent the florets from decoloring.

Wash and soak channa dal in water for 30 minutes.

Heat oil in a pressure cooker / pan, add fennel seeds and curry leaves. Once splutter add onions , cook till they translucent.

Add green chilli , tomato and some salt. Cook till tomato become mushy.

Now add florets ,channa dal ,Moong dal , sambar powder and required amount of salt and mix well. Close the lid and pressure cook it for 2 -3 hisses.

Once pressure went , garnish with coriander leaves and serve with Rice.

Cabbage Stir Fry with Channa Dal


Cabbage is ideal for weight loss.It has less calories and high in fiber. Including cabbage in your diet help to reduce weight. This Cabbage stir fry is simple and easy to make.When you lazy to cook ,you can make this healthy stir fry with in less time.







Ingredients

Cabbage                           1 cup (Shredded)

Channa Dal                     3 Tbsp

Red Chilli                        2 -3 Nos

Turmeric Powder          1/4 tsp

Mustard Seeds               1 tsp

Curry Leaves                1-2 Strands

Salt to taste


Method:

Soak channa dal for half hour in hot water.

In a vessel take cabbage, soaked channa dal , Turmeric powder and some salt. Add 1 1/2cup of water and cook till cabbage cooked.Drain any left over water and keep aside.

Heat oil in a pan , add mustard seeds once splutter add curry leaves and red chilli.

Now add cooked cabbage and channa dal. Mix well and cook for 2 -3 minutes.

Switch off the flame. Serve with Rice or Chappathi.

Avocado Chocolate chip Cookie


Avocado has good health benefits. I red some where Avocado is a good replacement for butter in baking. Before i tried my own recipe for pound cake using Avocado but it is a big flap. So i searched for recipe using Avocado and found the it here. Without  second thought i started making this Healthy cookie.











Ingredients

Whole Wheat  Flour             1 cup

Avocado                                1/2 cup

Sugar                                    3/4 cup

Egg                                      1 Nos

Baking soda                         2 tsp

Vanilla                                1 tsp

Salt                                     1/4 tsp

Chocolate chip                   3/4 cup (unsweetened)


Method:

Preheat the Oven to 290F.Line the cookie sheet with parchment paper and keep aside.

Scoop the avocado and mix on medium speed. Add sugar mix on high speed until creamy.

Add egg  and vanilla essence mix well.

In a separate bowl whisk wheat flour,baking soda and salt. Slowly add to wet ingredients and mix well.Now add chocolate chip combine well.

Scoop spoonful of dough in a cookie sheet an inch apart.Flat them using your palm and bake it for 10-15 minutes.

Home Made Rasam Powder



I won't prepare Rasam often.So i wont prepare batch of powder. when ever need it I will prepare  freshly. But keeping Rasam powder in handy make your cooking easy.







Ingredients

Coriander Seeds                      3/4 cup

Red chilli                                15 - 20 Nos

Pepper Corns                          1/4 cup

Cumin Seeds                          1/4 cup

Channa Dal                           1/4 cup


Method:

In a pan dry roast Channa Dal and red chilli until turns golden brown and keep aside.

In a same pan roast coriander seeds , pepper corns and cumin seeds.

Let it cool down and blend it in a blender.

Store it in air tight container.

Red Capsicum Chutney


If you bored with making regular chutney, try this spicy tangy Red capsicum chutney.Then this will added into your usual chutney menu.Capsicums are rich in Antioxidants. Specially Red capsicums  are high in Vitamin C.







Ingredients

Red Capsicum                       1 nos

Garlic                                    2 -3 pods

Red Chilli                              2 -3 Nos

Tamarind                               a small marble size

Peanut                                   2 tbsp

Urad Dal                               1 tbsp

Oil                                         1 tbsp

Salt to taste

Method:

In a pan dry roast Peanut and keep aside.

In a same pan ,add oil and fry red chilli ,Garlic, Urad Dal other one by one. Let it them coo.

Blend it in a blender along with Peanut , tamarind ,salt and water as a smooth paste.

Heat oil in a pan, add mustard seeds and curry leaves. Once splutter add this to chutney.



Serve with Idly or Dosa.

Cabbage Vadai


I Planned to make vadai but I'm running out onion. So i thought what can be replaced with onion.Long before i book marked this Cabbage Vadai here and have big size of cabbage sitting in my fridge. Without second thought i started preparing this healthy vadai.








Ingredients

Urad Dal                      1/2 cup

Cabbage                      1/2 cup (Finally chopped)

Green  chilli                2 Nos

Ginger                        1 inch

Coriander Leaves      2 tbsp

Curry Leaves             3-4 Strands

Salt to taste



Method


Wash and soak Urad dal for 3-4 hours. Drain the water and grind it with little water as a thick paste.

Add all the ingredients to this and mix well.

Heat oil in frying pan.When oil is hot wet your hand , take some amount of batter make a small and made a hole in middle using thumb and drop it into oil.

Fry on the both the sides until slightly brown.

Serve it with chutney , Sambar or with Tea/Coffee.

Banana Muffin


I had some ripped banana sitting in my kitchen, want to make something out of it. So i made this muffins.These are perfect for breakfast and as  a snack. For making these muffins chose banana with a more tiny brown spots.Those brown spots are called sugar spots;fruits with have those spots make the  sweetest muffin.I already posted eggless version of this.

All Purpose Flour                               1 3/4 cup

Sugar                                                   3/4 cup

Butter                                                  1/2 cup (Melted)

Egg                                                      2 Nos

Banana                                                5 small ripe

Baking Powder                                   1 tsp

Baking Soda                                        1/4 tsp

Salt                                                     1/4 tsp

Vanilla Essence                                 1 tsp

Cinnamon                                         1 tsp


Method

Preheat the oven 350F /180C. Line muffin tray and keep aside.

In a bowl , mix all purpose flour ,sugar,Cinnamon,baking powder,baking soda and salt.

In a separate bowl smash the ripped banana , mix butter and beaten egg.

Mix the wet ingredients with dry ingredients gently . (Don't Over mix) 

Scoop the batter in muffin pan and bake it about 20 - 25 minutes.

Paruppu Thogayal


Paruppu Thogayal is authentic Brahmin recipe.My mom used to make this Paruppu Thogayal whenever she prepares Vatha Kuzhambu / Kara Kuzhambu  and I love this combo.







Ingredients

Toor Dal                          1/2 cup

Red Chilli                       3 Nos

Pepper                            1 tsp

Garlic                             3 -4 nos

Grated Coconut             1/4 cup (optional)


Method:

Heat oil in a pan,fry Toor dal until golden brown and keep aside.

In a same pan add red chilli,pepper,garlic and grated coconut fry til coconut turns brown.

Allow it cool and grind it as a coarse paste by adding water little by little.

Serve hot with the rice.

Milagai Killi Potta Sambar


After long gap resuming to blogging. Millagi Killi Potta sambar is ever time favorite sambar.
 Its a easy cook  sambar. My grandma used to make this sambar often , smell of it makes me hungry when it starts boiling itself.



  


 
Ingredients

Toor Dal                       3/4 cup

Red chilli                      3 Nos

Garlic                           5 -6 pods (Crushed)

Onion                           1 meduim

Tomato                        1 medium

Tamarind                     small Marble size

Turmeric Powder       1/2 tsp

Mustard seeds            1 tsp

Pepper                        1/2 tsp

Curry Leaves           1-2 Strands

Coriander Leaves     For Garnish

Hing                          a pinch

Salt to taste


Method

Heat oil in a pan, add mustard seed,once splutter add curry leaves,hing,red chillies,garlic and pepper one by one.

Add onions and saute well. Add Tomato ,small amount of salt and turmeric powder and cook until tomatoes are mushy.

Now add cooked dal , tamarind juice and required amount of salt and water. Let it boil for 5-10 mintues.

Add chopped coriander leaves and switch off the flame.

Serve with hot rice
